Torta salata con patate, funghi e sale affumicato (Salted tart with potatos, mushrooms and smoked salt)




Pochi giorni, pochissimi giorni alla fine della sessione e ancora due esami davanti. Non so se sperare che il tempo passi in fretta o che scorra lentamente, ma in ogni caso suppongo che la mia volontà in questo caso non conti. In ogni caso mi scuserete se non sarò di grandi parole, ma non ho proprio il tempo materiale. :)
La ricetta dell'mtc di questo mese è la torta pasqualina, tipica genovese! Io proprio non lo sapevo che fosse di Genova e a dirla tutta in casa mia la torta pasqualina si è sempre fatta con spinaci e pasta brisé: orrore! Vitto e Alessandra mi perdoneranno, spero! ;) Ora grazie a loro so com'è la versione originale: se volete scorprirlo anche voi andate a leggere la splendida presentazione di Vitto.
Visto che l'mtc è prima di tutto variazione, ecco che questo mese ci siamo dati alla libera interpretazione del ripieno, seguendo invece in modo rigoroso la ricetta della sfoglia. Mica facile! Le sfoglie vanno tirate sottilissime e si rischia di bucarle facilmente. A me la torta non è venuta proprio perfetta ma sicuramente era buonissima!

Ingredienti:

per la pasta:

300 gr di farina manitoba
5 gr di sale
150 gr di liquidi: circa mezzo bicchiere di vino bianco e il resto di acqua
30 gr di olio

per il ripieno:

260 gr di funghi champignon
370 gr di patate
1 cipolla bionda
250 gr di ricotta vaccina
pepe
sale affumicato
noce moscata


Ho preparato la pasta mischiando tutti gli ingredienti assieme e impastando bene. Quindi ho diviso l'impasto in 5 palline e ho messo a riposare per circa un'oretta.

Ho sbucciato le patate e le ho tagliate a fettine sottili, quindi le ho lessante in acqua bollente non salata. Ho sbucciato e tritato la cipolla. Ho lavato, mondato e tagliato a fettine i funghi. In una padella ho messo la cipolla e i funghi con un po' d'acqua e li ho cotti velocemente. In una ciotola ho mischiato funghi, cipolle, patate e ricotta in una ciotola. Ho condito con sale affumicato, pepe e noce moscata.

Ho steso le palline di impasto con un mattarello e le ho assottigliate ulteriormente, aiutandomi con le mani. Ho messo la prima sfoglia sul fondo di una tortiera da 22 cm. Ho spennellato la prima sfoglia con un po' d'olio e vi ho posto sopra la seconda sfoglia.
Ho versato il ripieno nella tortiera, quindi ho coperto con le altre 3 sfoglie, spennellandole con l'olio.
 Ho arrotolato il bordo e prima di chiudere ho infilato una cannuccia fra il secondo e il terzo strato (quello più esterno) e ho soffiato, facendo gonfiare la pasta. Ho tolto la cannuccia e richiuso velocemente.
Ho cotto a 180° per circa 40 minuti.

I don't know if I should hope the time goes by quickly or slowly, anyway I don't think that my wish matters in this case. Anyway, I hope you'll excuse me if I will not be of many words, but I really do not have time! :)

The mtc recipe of this month is the torta pasqualina (litterally tart of easter), typical of Genova! I didn't know that it was of Genova and beeing honest, in my family we have always prepared it with spinach and short crust pastry: how horrible! Vitto and Alessandra will forgive me, I hope! ;) Now, thanks to them, I know the orginal recipe: if you want to discover it, read the fantastic presentation of vitto.
Considering that mtc it's first of all variation, this month we have to give our version of the filling and to follow strictly the recipe of the pastry. That's not easy! The pastry leaves have to be rolled out very fine and they can tear easly. My tart was not perfect but it was shurely very good!

Ingredients:

for the pastry:

300g of manitoba flour
5g of salt
30g of olive oil
150g of liquids: half glass of white wine and the rest of water

for the filling:

260g of champignon mushrooms
370g of potatos
1 golden onion
250g of cow's ricotta cheese
pepper
smoked salt
nutmeg

I prepared the pastry mixing all the ingredients together and kneading well. I divided the pastry in 5 little balls and left them to stand for more or less 1 hour.

I peeled the potatos and cut them in thin slices, then I cooked them in boiling unsalted water. I peeled and chopped the onion. I washed, peeled and cut the mushrooms in slices. I put the onion and the mushrooms in a fryingpan with a bith of water and cooked them quickly. I mixed potatos, onion, mushrooms and ricotta cheese in a bowl. I added smoked salt, pepper and nutmeg to taste.

I rolled up the balls of pastry with a rolling pin and made them thiner, helping myself with the hands. I put the first pastry leaf on the bottom of a 22cm cakepan. I brushed the pastry leaf with a bith of oil and covered with the second leaf.
I pourred the filling in the pan, then i covered with the 3 remaining leaves, brushing each of them with oil. I crimped the edge of the pastry and before closing it, I inserted a straw beetwen the third (the most external) and the second pastry leaf and I blowed, so that the leaf swelled. I removed the straw and closed the pastry very quickly.
I cooked in static oven at 180° for 40 minutes.

  7. Sembra ben preparata invece! buono l'accostamento con il sale affumicato. Non so se Alessandra e Vitto ti perdoneranno, ma io penso che lo farò. In bocca al lupo per gli esami

  8. Carissima direi che hai imparato a cucinare benissimo anche da sola.
    Anche io non ho mai fatto corsi ne stage di cucina da cuochi esperti, ma leggo e provo, soprattutto provo molto sbagliando tanto e azzeccando quaslcosa.
    Bella bella la tua versione con funghi e patate che poi è un accostamento classico qui in liguria.
