Crostatine al limone (Little lemon tarts)




Finalmente un po' di sole e caldo! Certo, piove spesso, ma almeno non nevica come poco tempo fa. Ho voglia di dolci più freschi e ieri mi sono pappata un bel gelato. Ha inaugurato una nuova gelateria a Bolzano, la Bellamia, che ho scoperto far parte di una catena di gelaterie. Voi ci siete mai stati? Che ne pensate? :)

Per restare in tema primaverile, oggi vi propongo delle crostatine buonissime, molto fresche e appaganti anche per chi, come me, non ama i dolci troppo dolci. Sono molto facili da preparare, perché la pasta frolla si può fare prima e anche la crema è velocissima da fare. Si tratta del lemon curd senza burro, una meravigliosa crema a base di limone che ho scoperto relativamente da poco. La ricetta è di Menù Turistico e vi assicuro che crea dipendenza! Oltretutto è un'ottima idea per una crema priva di latticini. ;)

Ingredienti:

per la pasta frolla (ve ne servirà mezza dose, ma non si può dividere un uovo. Potete usare la pasta rimanente per dei biscotti, oppure congelarla):

250 gr di farina 00
125 gr di burro
100 gr di zucchero
1 uovo
mezzo cucchiaino di polvere di vaniglia
1 pizzico di sale

per la crema al limone:

2 tuorli
2 uova
il succo e la scorza di 3 limoni
200 gr di zucchero
1 cucchiaio d'olio


Ho preparato la pasta frolla. Ho impastato lo zucchero con il burro ammorbidito, quindi ho aggiunto l'uovo. Ho aggiunto la vaniglia e il sale e infine la farina. Ho impastato bene, quindi ho messo la pasta a riposare un'ora in frigo.

Ho preparato la crema mettendo i tuorli, le uova, il succo e la scorza dei limoni e lo zucchero in un pentolino. Ho mescolato bene, quindi ho messo sul fuoco e, mescolando, ho cotto fino a quando la crema di è addensata. Ho aggiunto l'olio, ho mescolato e ho lasciato raffreddare.

Ho steso la pasta frolla, quindi ho ritagliato dei cerchi di pasta e li ho messi negli stampini per le crostatine, imburrati e infarinati. Ho bucato la pasta con una forchetta, quindi ho appoggiato un pezzo di carta da forno sulle crostatine e ci ho messo un po' di fagioli secchi.
Ho cotto a 180° fino a che la pasta si è dorata, togliendo carta e fagioli a circa metà cottura. Ho lasciato raffreddare gli involucri di pasta frolla, quindi ho riempito con la crema.

A new ice-cream parlour, the Bellamia, has been inaugurated in Bolzano and I discovered that it's part of a chain. Have you ever been there? What do you think about it? :)

To remain in a springy theme, today I suggest you some very good little tarts, very fresh and fullfilling also for those, like me, who don't love too sweet desserts. They are very easy to prepare, beacuse you can prepare the short crust pastry in advance and the cream too is very quick to do. It0s the butter-free lemon curd, a wonderful lemon-cream, which I discovered a short time ago. The recipe is of Menù turistico and I assure you that it creates dipendency! Moreover, it's a good idea for a milk-free cream. ;)

Ingredients:

for the short crust pastry (you will need only half of the pastry, but it's impossible to divide an egg. You can use the remaining pastry to bake cookies or you can freeze it):

250g of pastry flour
125g of soft butter
100g of white sugar
1 egg
half teaspoon of vanilla powder
a pinch of salt

for the lemon cream:

2 yolks
2 eggs
the peel and the juice of 3 lemons
200g of white sugar
1 tablespoon of oil

I prepared the short crust pastry. I kneaded the butter whith the sugar, then I added the egg. I added the vanilla powder, the salt and, finally, the flour. I kneaded well, then I left the pastry to stand.

I prepared the cream, I put the yolks, the eggs, the peel and the juice of the lemons and the sugar in a small pot. I mixed well, I put the pot on the burner and cooked until the cream was thickened. I added the oil, stirred and left it to cool.

I rolled the pastry, then I cut many circles of pastry and put them in the buttered and floured pans. I riddled the pastry with holes with a fork, then I put a little piece of baking paper on every tart and put some dry beans on it.
I cooked at 180° until the pastry was golden, removing the baking paper and the beans at half of the baking. I left them to cool, then I filled them with the cream.
