Pane dolce del sabato ai semi di papavero (Sweet Saturday bread with poppy-seeds)



Lo confesso, sono una perfezionista, specie sulle cose che mi interessano davvero. Chi mi conosce forse userebbe un termine un po' meno simpatico, come "puntigliosa". Quando inizio, non mi fermo più!
All'università, se una pagina di appunti non è come la voglio, sono capace di stracciare tutto e ricominciare da capo. Quando cucino, ci tengo molto all'aspetto di quello che servo. Quando scrivo un post sul blog, voglio sempre che ciò che scrivo sia interessante, o che comunque rispecchi ciò che penso e sento in quel momento (ecco perché non riesco a scrivere i post in anticipo).
Questo è il motivo per cui a volte non scrivo per un po', pur avendo diverse ricette in lista, pronte per essere pubblicate, in tutta la loro golosità. Se sono di cattivo umore, o annoiata o semplicemente non ho nulla da comunicare non ce la faccio proprio: rimando, temporeggio, scrivo e cancello, insomma il post non s'ha da fare. 

Ho provato a scrivere questo post per una settimana di fila senza risultato e purtroppo mi sono anche scaduti i termini per partecipare all'mtc di ottobre, ma era più forte di me. Visto però, che la ricetta del mese l'ho provata e l'ho pure trovata meravigliosa, mi sono detta che vale proprio la pena di condividerla con voi, anche al di fuori dell'mtc.




Si tratta di un pane dolce del sabato, ricetta della cucina Kosher e che quindi deve seguire tutte le regole di questa particolare cucina. Un esempio? Non potendo abbinare carne e derivati del latte, e mangiando carne di sabato, il pane dolce non può assolutamente contenere latte o suoi derivati.

Devo dire che da buona altoatesina, all'inizio ero un po' perplessa dall'assenza di burro nella treccia: temevo che venisse dura o che sapesse troppo di olio di oliva. Mi sono dovuta ricredere alla grande: la pasta è morbidissima e profumatissima e credo proprio che rifarò questa splendida treccia anche con altri ripieni.
Per questa volta ho deciso di utilizzare un ripieno tipico delle trecce dolci dell'Alto Adige: la crema al papavero. A me piace moltissimo e se non altro è un po' diversa dal solito.

Mi fa sempre piacere leggere un commento, qualunque esso sia! Ingredienti:

per la pasta:

570 gr di farina 0 (la ricetta originale ne prevedeva 500 ma per raggiungere una consistenza lavorabile ho dovuto aggiungerne altri 70, vedete voi se ne bastano 500 e in caso aggiungete)
2 uova medie (il peso dovrebbe aggirarsi intorno ai 62 gr per uovo)
100 gr di zucchero
20 gr di lievito di birra fresco
125 ml di acqua tiepida
125 ml di olio extra vergine di oliva (usatene uno dal sapore leggero)
10 gr di sale

per il ripieno e la decorazione:

370 gr di acqua
100 gr di semi di papavero + altri da mettere sopra
80 gr di pane grattuggiato + altro se necessario
2 cucchiai di miele
60 gr di zucchero
cannella
un uovo


Ho fatto sciogliere il lievito nell'acqua, aggiungendo un cucchiaino di zucchero. Ho lasciato a riposare per una decina di minuti. Ho mischiato la farina con il sale e lo zucchero e vi ho aggiunto il lievito. Ho iniziato ad impastare (potete farlo sia a mano che con l'impastatrice), quindi ho aggiunto l'olio e infine le uova, uno alla volta. Ho continuato ad impastare finché l'impasto non si staccava dalla ciotola. Ho lasciato lievitare circa 3 ore (i tempi di lievitazione cambiano moltissimo a seconda dell'umidità e della temperatura).

Nel frattempo ho preparato il ripieno. Ho messo a bollire l'acqua. Una volta ragiunto il bollore, ho tolto l'acqua dal fuoco e ci ho aggiunto tutti gli altri ingredienti (tranne l'uovo). Ho lasciato a riposare circa 5 minuti. Il ripieno dev'essere spalmato sulla pasta, quindi non dev'essere troppo liquido. Se necessario, aggiungete ancora pane grattuggiato. Ho messo a raffreddare in frigo.

Ho tagliato l'impasto in due, quindi ho diviso ogni pezzo in altri tre pezzi.
 
Ho infarinato il piano di lavoro e con il mattarello ho tirato ogni pezzo di pasta, creando delle strisce larghe circa 15 cm e larghe 35 cm. Ho spalmato un po' di ripieno su ogni striscia, quindi ho richiuso la pasta, creando dei salsicciotti. Ho preso tre salsicciotti e li ho uniti in cima, quindi ho creato una treccia. Ho seguito lo stesso procedimento anche per l'altra pasta. 
Ho messo a lievitare per altre due ore.

Ho sbattuto l'uovo con un cucchiaio d'acqua e l'ho usato per spennellare le due trecce. Ho cosparso la treccia con semi di papavero e ho infornato a 200°, forno statico, per circa 25 minuti.






I confess, I’m a perfectionist, especially in those things that I’m really interested in. People who know me would probably use a term a bith less nice, like “punctilious”. When I begin, I don’t stop myself!

In university, if a notes’ paper isn’t like a would like, I rip it out and I start again from the beginning. When I cook, I’m very fond of the aspect of what I serve. When I write a post on the blog, I always want that waht I write is interesting, or however, that it reflects what I think and feel in that moment (that’s why I’m not able to write posts in advance).

That’s the reason cause now and then I don’t write for a little while, althought I have several recipes ready to be published, in all their gluttony. If I’m in a bad mood, or I’m bored or simply I’ve nothing to say, I really can’t manage it: I postpone, stall, write and obliterate, in short the post is not ready to born. 

I tried to write this post for a week without managing it and unfortunately the time to participate to mtc of october is up, but I couldn’t resist. But seeing that I tried the recipe of the month and I find it wonderful, I said to myself that it could be worth sharing it with you, also out of the mtc.

It’s a sweet bread of Saturday, a recipe of the Kosher cooking, that has therefore to follow all the particular rules of this cooking. An example? It’s forbidden to match meat and milk derivatives and Jews eat meat on Saturday, the sweet bread can’t absolutely contain milk or milk derivatives.

 I’ve to say that as good South Tyrol’s girl, I was a bith perplexed by the absence of butter: I was afraid that the braid would be hard or that it could taste too much of olive oil. I had to change my mind: the pastry is very soft and fragrant and I think that I will do this braid again, trying also new fillings.

This time I used a typical filling of the brioche braid of South Tyrol: the poppy cream. I love it and is original.

Ingredients:


for the pastry:


570g of all-purpose flour (the original recipe said 500g but to reach a workable consistency I needed to add 70g more, see for yourself if you should add more)
 2 middle eggs (the weight should be around 62g for each egg)
100g of white sugar
 20g of fresh brewer’s yeast 
125ml of lukewarm water
125ml of extra virgin olive oil (use a light flavoured one)
10g of salt

for the filling:

 
370g of water
100g of poppy-seeds + more for the decoration
80g of breadcrumbs + more if necessary
2 tablespoons of honey
60g of white sugar
cinnamon
1 egg

 I dissolve the yeast in the water with a teaspoon of sugar. I let it to stand for 10 minutes. I mixed the flour with the salt and and the sugar, then I added the yeast. I began to knead (you can do it with the kneader or by yourself), then I added the oil and the egg, one-by-one. I continued to knead until the pastry came off of the bowl. I let it to rise for more or less 3 hours (the rising time change notably depending on the dampness and the temperature).

In the meantime I prepared the filling. I boiled the water, then I added all the ingredients (except for the egg). I let it to stand for more or less 5 minutes. The filling has to be spread on the pastry, so it must not be too liquid. If necessary, add some breadcrumbs more. I let it to cool in the fridge.

 I cut the pastry in two pieces and then I divided each piece in 3 more pieces.

I floured the worktop and rolled the pastry with a rolling pin, obtaining 3 pastry strips, 35 cm wide and 15 cm high. I spread a bith of the filling on each strip, then I closed the pastry, obtaining 3 “sausages”. I joined the 3 sausages together on the top, then I formed a braid. I floowed the same procedure for the other piece of pastry.

I let it to rise for two more hours.

I beat the egg with a tablespoon of water and I used it to brush the two braids. I sprinkled the braids with poppy-seeds and baked in static oven at 200° for more or less 25 minutes.
