Il senza glutine è sexy: torta Red Velvet! (Gluten free is sexy: Red Velvet cake)








Stefania mi perdonerà per il tono scherzoso di questo post, ma no, non ci riesco proprio: ho uno spirito ottimista. Cerco sempre di vedere il lato positivo delle cose e dico cerco perché spesso non ci riesco ma lo sforzo c'è: non ho mai visto nessuno piangersi addosso e ottenere qualcosa di buono.

Beh, il tema di oggi è la celiachia: ancora una volta l'MTC si rivela una scuola di cucina e una bella occasione per conoscere qualcosa di nuovo o per approfondire un tema già conosciuto. Questo mese Stefania (Cardamomo&co) ci parla della celiachia e di cosa significa vivere con questo problema. Se ne soffrite, un salto nel suo blog è d'obbligo: troverete un sacco di ricette golosissime.
Fortunatamente non ho mai dovuto avere a che fare in prima persona con la celiachia, in compenso ho sofferto a periodi alterni di varie intolleranze, più o meno forti. Non ho potuto mangiare verdure crude, carne di maiale, fragole, pesche, latte e derivati, mele, gamberi e boh, non ricordo se qualcosa d'altro. Certo, non rischiavo la pelle, ma mangiando una di queste cose stavo piuttosto male e non era per niente divertente. 
C'è da dire che all'inizio la si vede peggio di quello che è, ricordo che non mi veniva in mente nulla che potesse piacermi mangiare senza gli ingredienti incriminati, dopo però pian piano ci si abitua. Io ho cercato di prenderla per il verso giusto ed è proprio grazie a queste intolleranze che mi sono appassionata alla cucina e alla fine ho aperto questo blog, quindi la vedo quasi come una cosa positiva. Inutile negare però, che c'erano aspetti davvero brutti: innanzitutto ti rendi conto di quanti alimenti contengano ingredienti che nulla c'entrano col cibo che compri, insomma, possibile che compri un po' di pane e devi preoccuparti che non contenga grasso animale? Altra cosa: spesso e volentieri ricevi zero comprensione dagli altri. Sì, insomma, a volte ti senti un problema e ti passa pure la voglia di uscire a mangiare: tanti considerano l'intolleranza come una sorta di capriccio, quando poi sono i primi a farti girare mille pizzerie perché non usano il pomodoro che piace a loro... Per non parlare di chi ti invita a cena e ti rifila qualche ingrediente che ti fa male nascondendolo e pensando che "tanto nn se ne accorge": è vero, magari sul momento uno non se ne accorge, ma l'intestino se ne accorge e non vi racconto il seguito.
Questa è la mia esperienza, che è una cavolata in confronto a chi deve convivere con allergie ben più pesanti, come quella alla frutta secca o la celiachia appunto. In quest'ultimo caso non si tratta più solo di non mangiare il cibo incriminato, ma anche di non mangiare cibo contaminato, vale a dire che è entrato direttamente o indirettamente in contatto con cibo contenente glutine. Qualche esempio? Un celiaco non può mangiare un risotto girato con un cucchiaio di legno con cui si è girata una pasta, anche se lavato. Un celiaco non può mangiare niente che non sia espressamente garantito come senza glutine, perché c'è sempre la possibilità che sia contaminato, e vi assicuro che sono ancora pochi i prodotti che danno questa garanzia.

Dopo tutto questo discorso, il punto alla fine è uno: si può essere celiaci e mangiare bene, gran bene. Si può invitare a cena un celiaco e fare una gran cena, senza dover per forza ridursi a bistecchina e verdure lesse: insomma, un celiaco non deve rinunciare a piatti gustosi e apprezzabili da chiunque altro. Se volete una prova di ciò, questo post fa proprio per voi. Pensate che un celiaco non possa mangiare una buonissima e bellissima torta? Niente di più falso! 
La Red Velvet che vi propongo è assolutamente gluten free, la farcia non è quella originale e forse si avvicina un po' più ai gusti nostrani. Voi che ne pensate? :) 
Piccolo consiglio prima di lasciarvi alla ricetta: l'impasto tende a indurire col freddo, quindi vi consiglio di tirare fuori la torta dal frigo almeno un'ora prima di mangiarla! 
Grazie ancora a Stefania e all'MTC e mi raccomando, provate a preparare questa torta anche se non siete celiaci, perché è buonissima. :) E poi, potrebbe rivelarsi molto utile per un compleanno con invitati diversi ;)

PS: vi indico le marche dei prodotti usati, in modo che possiate reperire più facilmente gli stessi prodotti senza glutine. Io ho comprato tutto al supermercato, tranne il colorante.











 

Ingredienti:

per la pasta:

160 gr di farina di riso (Pedon)
60 gr di fecola di patate (Pedon)
30 gr di Maizena (Unilever)
0,5 cucchiaino da tè di sale
8 gr di cacao amaro
110 gr di burro 
300 gr di zucchero
3 uova medie
semi di vaniglia
240 ml di latticello, detto anche buttermilk (se non lo trovate potete ottenerlo unendo 240 ml di latte con un cucchiaio di succo di limone e facendolo riposare per 20 minuti)
1 cucchiaino circa di colorante in pasta concentrato rosso
1 cucchiaio di aceto bianco
1 cucchiaino da te di bicarbonato di sodio

Per la farcia:

500 gr di mascarpone
250 gr di panna
170 gr di latte condensato zuccherato
340 gr di ananas in scatola


Ho mescolato la farina di riso, la Maizena, la fecola di patate il cacao e il sale. In un'altra ciotola ho sbattuto il burro a temperatura ambiente con le fruste elettriche, ho aggiunto lo zucchero e ho montato per qualche minuto. Ho aggiunto le uova, una alla volta, facendole incorporare bene prima di aggiungere la successiva.
Ho mescolato il colorante con il latticello, quindi ho iniziato ad aggiungerlo al composto di burro e uova, alternandolo con il mix di farine. Ho aggiunto la vaniglia e ho mescolato.
In una tazzina ho mischiato l'aceto con il bicarbonato e l'ho aggiunto all'impasto.
Ho preso un pezzo di carta da forno, l'ho bagnata e strizzata, quindi vi ho rivestito una teglia (l'ideale sarebbe una tortiera da 18-20 cm di diametro ma io non la avevo). Ho versato metà dell'impasto nella teglia e ho cotto per 45 minuti in forno a 175°. A cottura ultimata ho fatto raffreddare l'impasto 10 minuti nella teglia, quindi l'ho tirato fuori e l'ho fatto raffreddare completamente. Nel frattempo ho cotto l'altra metà di impasto. Una volta freddo, ho coperto la torta con la pellicola e l'ho messo in frigo per una notte intera.
Il giorno dopo ho ritagliato la torta per renderla più regolare: mi raccomando, non buttate (o mangiate!!!) i ritagli, servono per la decorazione. Con un coltello ho tagliato a metà entrambi i rettangoli di pasta: non è stato facilissimo perché ho usato una teglia un po' troppo grande e quindi la pasta era bassa.
In una ciotola ho montato la panna. In un'altra ciotola ho sbattuto il mascarpone, quindi ho aggiunto il latte condensato e ho sbattuto bene con le fruste. Ho aggiunto la panna e ho mescolato con una spatola, mescolando dal basso verso l'alto. 
Ho scolato l'ananas e l'ho tagliato a pezzetti.
Ho farcito il primo strato della torta con un po' di crema, ho coperto con un po' di ananas e vi ho sovrapposto il secondo strato di pasta. Ho continuato così fino all'ultimo strato. Non ho messo l'ananas in cima alla torta. Con la crema rimanente ho coperto anche i lati della torta. Ho sbriciolato i ritagli della torta con le mani e li ho appiccicati ai lati della torta. Ho creato i decori con una sac à poche. 
















Stefania will forgive me for my humorously tone in this post, but no, I can’t succeed: I’ve an optimistic spirit. I always try to see the positive side of the things and I say “try” because often I’m not able but there is the effort: I never saw someone feeling sorry for oneself and obtaining something good.

Well, the theme of today is celiac disease:  MTC is again a cooking school and a cool opportunity to learn something new or to enhance an already known theme. This month Stefania (Cardamomo&co) speaks us about celiac disease and what does it mean living with this problem. If you suffer from it, a pop round to her blog is needed: you’ll find many yummy recipes.

Fortunately, I never had to handle in first person with celiac disease, in compensation I suffered in alternate periods from various, more or less strong, intolerances. I couldn’t eat raw vegetables, pork meat, strawberries, peaches, milk and derivatives products, apples, shrimps and, don’t remember if something else. Of course, I didn’t risk my life, but I was sick if I ate one of this things and it wasn’t funny.

I must say that at the beginning it seems worst than it is, I remember that it didn’t come to mind any good food without those ingredients, but I gradually I got used to it. I tried to get on the right side of it and is due to these intolerances that I go tinto the cooking and finally I opened this blog, so I see it like a positive thing. It is useless to deny that there were really bad aspects: first of all, you realize that there are a lot of products which contain these ingredients, which have nothing to do with the food you’re buying. I mean, is it possible that you buy a bith of bread and you have to worry about the fact that it could contain animal fats? An other thing: very often you recive zero comprehension by other people. Yes, sometimes you feel to be a problem and you don’t feel to go to eat out anymore: many persons think that intolerance is a whim, but then they are the first, that make you go around thousand pizzerie beacuse they don’t use their favourite tomato… Not to mention who invite you for dinner and gives you any ingredient which makes you feel bad, concealing it and thinking “she will not realise it”: that’s true, maybe you don’t immediately realise it, but the intestine realise it and I don’t tell you about the sequel.


That’s my experience, that is a mess in comparison with those who have to live with more heavy allergies, like the one to dry fruits or celiac disease. In the latter case, it isn’t only about eating the allergenic ingredient, but it’s also about not eating contaminated food, which is food that contacted directly or indirectly food which contains gluten. Any examples? A celiac can not eat a risotto which has been blended with a wood spoon with whom there had been blended pasta, although it had been washed. A celiac can not eat food that is not certified “gluten free”, beacuse there is always the possibility that it has been contaminated and I assure you that there are still a few products which give this guarantee.

After this long speech, the point is the following: you can be celiac and eat well, very well. You can invite a celiac for dinner and prepare a good dinner, without reducing to cook steak and boiled vegetables: in other words, a celiac must not renounce to tasty dishes, which can also be appreciated by all other people. If you want a proof of that, this post is made for you! Do you think that a celiac can not eat a yummy and beautiful cake? There’s nothing more false!

The Red Velvet that I suggest you is totally gluten free, the filling is not the original one and maybe are closer to our local taste. What do you think about it? 



A little suggestion before letting you to the recipe: the pastry tends to become hard with cold, so I suggest you to take the cake out of the fridge almoust one hour before eating it!

Ingredients:


for the pastry:

160g of fine rice flour
60g of potato starch
30g of corn flour
half teaspoon of salt
8g of bitter cocoa powder
110g of unsalted butter
300g of white sugar
3 middle eggs
vanilla seeds
240ml of buttermilk (if you don’t find it, you can obtain it mixing 240ml of milk with a tablespoon of lemon juice and letting it to go sour for about 20 minutes)
more or less 1 teaspoon of red food colouring paste
1 tablespoon of white vinegar
1 teaspoon of baking soda


for the filling:

500g of mascarpone cheese
250g of whipping cream
170g of sugared condensed milk
340g of ananas in syrup (dribbled weight)

I mixed the rice flour, the corn flour, the potato starch and the salt. In an other bowl, I beated the butter at room temperature with electric whisks, I added the sugar and whipped for a few minutes. I added the eggs, one-by-one, letting mix the first before adding the following.

I mixed the food colouring paste with teh buttermilk, then I began to adding it to the mixture of eggs and butter, alternating it with the flour mixture. I added vanilla seeds and mixed.
In a small cup I mixed the vinegar with the baking soda and added it to the mixture.

I took a peace of baking paper, I poured it with a bith of water and squeezed it, then I used it to cover a cakepan (the ideal would be a cakepan with a diameter of 18/20cm, but I had noti t). I pourred a half of the pastry in the pan and cooked it for 45 minutes at 175°. When it was ready, I left it to cool for 10 minutes in the pan, then I took it out from the pan and left it to cool complitely. In the mean time I cooked the other half of the pastry. When it was cold, I covered the cake with a bith of plastic wrap and put it in the fridge for a night long.

The next day I cut out the cake to make it more regular: do not throw away (or eat!!) the swatches, ok? They are needed for teh decoration. I cut every pastry rectangle in two halves with a knife: it wasn’t simple beacuse I used a pan which was a bith too big and so the cake was short.
I whipped the whipping cream in a bowl. In an other bowl, I whipped the mascarpone cheese, then I added the condensed milk and mixed well with the whisks. I added the whipping cream and mixed well with a palette knife, mixing bottom-up.

I drained the ananas and chopped it.

I filled the first layer of the cake with a bith of cream, I covered with a bith of ananas and put the second layer of pastry on it. I continued in the same way with the other layers. I didn’t put the ananas on teh top of the cake. I covered the sides of the cake with the remaining cream. I crumbled the pastry swatches with my hands and pasted them on the sides of the cake. I created the decorations with the cream and an icing bag.

  1. E' proprio il tono che voglio, mia cara, non ho proprio niente da perdonarti, anzi ti devo ringraziare. Perché se è vero che la celiachia è una gran palla, è pure vero che ci si può convivere e allegramente, soprattutto quando si trovano persone come te e le altre meravigliose sfidanti! :)
    La torta è veramente chiccosissima, così come quegli accessori che si vedono sullo sfondo... Insomma obiettivo centrato alla grande!
