Insalata di polpo (Octopus salad)




Acqua, tanta acqua: ecco cosa viene giù dal cielo da ieri sera e io non me ne lamento, anzi! Le temperature si sono finalmente abbassate, stamattina alle 11 c'erano 15° e si respira di nuovo. Io non vedevo l'ora, amo il freddo e con 40° non riuscivo proprio a studiare.
Certo, diciamo che il caldo aiutava a mangiare meno, infatti è da metà agosto che sono a dieta e ammetto che il freschetto fa venire voglia di accendere il forno e cucinare tante cose buone, anche se caloriche. Ma sicuramente troverò il modo per fare delle versioni light dei miei piatti preferiti, senza contare che un giorno a settimana mangio quel che voglio e mi concedo sempre un dolcetto!

Se da voi fa ancora caldo, sarete felici di provare la ricetta di oggi. Si tratta di un insalata di polpo molto fresca e gustosa, seppur con poche calorie. Può essere una buona alternativa alla classica insalata di polpo e patate: è colorata e la croccantezza del sedano secondo me è perfetta. Potete servirla come antipasto, secondo o piatto unico a seconda delle dosi.

Ingredienti (per 3 persone):


1 kg di polpo (io ho usato quello surgelato)
mezzo bicchiere di vino bianco
pepe rosa in grani
3 patate piccole
frutti di cappero qb
peperoni in agrodolce qb
2 coste di sedano verde
cipolla rossa qb
succo di limone
2 cucchiai di limone
sale, pepe


Ho fatto bollire dell'acqua con il vino bianco e il pepe rosa, quindi ho aggiunto il polpo. Ho cotto per circa 30-40 minuti, finché il polpo non è diventato morbido. Per capire se il polpo è pronto, infilzatelo con la forchetta sul corpo (che è la parte più spessa), se lo fate senza problemi allora è cotto. Il tempo di cottura varia a seconda del peso del polpo, io avevo tanti polpi piccoli. Ho fatto raffreddare nell'acqua di cottura.
Ho tagliato il polpo a pezzi e li ho messi in una ciotola. Ho bollito le patate, le ho sbucciate, le ho tagliate a fette e le ho aggiunte al polpo. Ho lavato, mondato e tagliato a pezzetti il sedano. Ho scolato e tagliato a pezzetti un po' di peperoni. Ho sbucciato e tagliato finemente la cipolla rossa e ho staccato i frutti di cappero dai gambi.
Ho unito tutti gli ingredienti e ho condito con succo di limone, olio, sale e pepe. Ho lasciato ad insaporire per un'oretta e ho servito a temperatura ambiente.

Temperatures finally falled down, this morning at 11 am it was 15 degrees and we could breath again. I looked forward to it, I love cold and with 40 degrees I was not able to study.
Surely, hot weather helped to eat less, infact I'm on diet from the midlle of august and I admit that the fresh air makes me want to turn on the oven and to cookmany delicious things, although they are calorie. But I will surely find the way to cook light versions of my favourite foods, notto mention the fact that once a week I eat what I want and I allow myself a sweetness!

If in your country it's still hot, you will be glad to taste the recipe of today. It's a fresh and tasty octopus salad and it's light. It can be a good alternative to the classic salad with octopus and potatos: it's colorful and the crunchiness of the celery is perfect! You can serve it as an appetizer, a second course or a single course.


Ingredients (serves 3):

1kg of octopus (I used frozen octopus)
half glass of white wine
whole pink peppercorns
3 small potatos
caper fruits to taste
sweet-and-sour pepper to taste
2 sticks of green celery
red onion to taste
lemon juice
2 tablespoons of olive oil
salt, pepper to taste


I boiled the water with the wine and the pink pepper, then I added the octopus. I cooked it for 30-40 minutes, until the octopus was soft. To understand if the octopus is ready, stab the body (which is the thickenest part) with a fork, if you manage to do it without problems the octopus is ready! The cooking time changes depending on the weight of the octopus, I had many small octopuses. I left them to cool in the cookin water.

I chopped the octopus and put it in a bowl. I bolied the potatos, peeled them, cut them in slices and added them to the octopus. I washed, peeled and chopped the celery. I drained the peppers and chopped them. I peeled and cut in fine slices the onion. I turned the stalk of the capers away.

I put all the ingredients together and dressed with lemon juice, oil, salt and pepper. I left it to become tasty for an hour and served it at room temperature.
